Dr. Todorov's DIY recipe calls for green tea extract. But will just plain green tea (from capsules) work?

It's just called "Green Tea", no "extract". However, this brand does have a green tea extract supplement.

Does it matter which I use?

The extract should be better because it is more soluble and also have greater concentrations of antioxidants.

Thanks for that - I went with the extract instead. However, I am not sure whether I'm dissolving it successfully. Thoroughly mixed in warm water, the powder quickly changes from clumps to many small particles and the mixture turns a murky dark brown. Is this normal?

It partly depends on what type of tea was used and how extract was prepared. Some extract dissolve better in oil (e.g. coconut oil). If undissolved particles bother you, you can filter them away. (just like you filter coffee)
